Steps to make Steamed Vegetable Bread:
- Heat up the steamer. Put aluminium (or paper) cupcake liners in the cupcake mould.
- Beat the egg in a bowl, add the vegetable juice and mix.
- Add the pancake mix and cut and fold it in with a rubber spatula.
- Pour the mixture into the cupcake mould until about 70% full.
- Place into the steamer and steam for 10 - 15 minutes. When a skewer poked through the middle comes out clean, they are done.
- These are mildly sweet and contain a lot of vegetable juice, so you can have them for breakfast or lunch. They are great for kids' meals or snacks! My son loves them.
- You can keep these in the freezer, so make a lot, wrap each one individually, and put in the freezer. Let them defrost at room temperature when you want to eat them.
