The ingredients needed to make Chewy Steamed Bread with Mochiko & Pancake Mix:
  1. Take Plain
  2. Make ready 100 grams Pancake mix
  3. Get 70 grams Mochiko
  4. Prepare 1 tbsp Vegetable oil
  5. Prepare 100 ml Milk
  6. Make ready 5 tbsp Sugar
  7. Get 1 dash Baking powder
Steps to make Chewy Steamed Bread with Mochiko & Pancake Mix:
  1. Mix together the egg, vegetable oil, milk and sugar well.
  2. Add the pancake mix and mochiko to the bowl and fold in with a spatula.
  3. [Steaming in a Steamer] Line the inside of a steamer container with glassine paper cups. Pour the batter into cups.
  4. Once there is steam coming out of the steamer, add the cups and steam for 15-20 minutes (this takes a bit longer than the frying pan way).
  5. [Steaming in a frying pan] Pour the batter into the cups and line them up inside a large, flat frying pan.
  6. Add 1 cm boiling water, cover the pan with a lid and steam for 12-14 minutes.
  7. Once the bread has risen, they're done.
  8. (Variation) I've made lots of variations of the original "Steamed Bread with Pancake Mix"with bananas, cocoa powder, raisins etc.
  9. For each recipe, replace the 200 g pancake mix with 100 g pancake mix + 70 g mochiko.
  10. Note: Shiratamako is extremely fine, but clumps easily, so it's not ideal for steamed bread.
  11. Note: Using mochiko doesn't rise well, so add baking powder. The top photo omits the baking powder.
