  1. Break up the tofu and put it on a plate. Finely slice the green onions, and shred the lettuce. Rehydrate the hijiki.
  2. Pour the sesame oil into the frying pan and fry the chirimen jako. Add the hijiki and fry it quickly.
  3. Put the lettuce on the plate with the tofu and lightly mix. Top with the hijiki and chirimen jako, then sprinkle on some bonito flakes and green onion.
  4. Grind the sesame seeds with a mortar and pestle. Mix in the ponzu and sugar, then add the chopped umeboshi. Add the sesame oil and pour the mixture over the tofu to finish.
