The ingredients needed to make My Toscana:
- Prepare 8 chicken bouillon cubes
- Get 6 cup water
- Take 2 lb Ground Italian Sausage
- Get 6 slices bacon, cooked and crumbled
- Get 1/2 medium onion, diced
- Prepare 2 clove minced garlic
- Prepare 1/2 tsp crushed red pepper
- Take 5 medium potatoes, diced
- Get 2 cup chopped kale
- Get 1/2 pints heavy cream
Instructions to make My Toscana:
- In a large bowl, combine bouillon cubes and water. Set aside.
- In a frying pan, fry bacon until crispy. Remove from pan to paper towels to drain, but keep the grease in your pan! Crumble bacon.
- Dice onion and add to bacon grease. Saute until translucent, about 8-10 mins. Add ground sausage, garlic and crushed red pepper. Cook sausage thoroughly.
- Peel and dice potatoes. At this point, decide what vessel you'll be using to continue cooking. I always throw everything in the crock pot, but a soup pot on the stove works just as well.
- Add sausage mixture into the crock pot, along with the crumbled bacon and potatoes. Pour your bowl of chicken stock from step one into the crock and set it on high for about three hours.
- Once the potatoes are fork tender, your soup is almost done. Wash and chop your kale (or cheat and buy prewashed kale greens at the store). Add to pot and stir. These will take about 10-15 minutes to wilt.
- Finish soup off by adding the heavy cream. Serve with grated Parmesan and some good bread for dipping.

Soemtimes, comfort foods can be perfectly healthy and good for us to eat. Some foods really do raise your mood when you eat them. This is possible as these foods are rich in magnesium which promotes serotonin production. Serotonin is a feel-good chemical that directs the brain how to feel at any given moment. Cold water fish are good if you are wanting to feel better. Cold water fish like tuna, trout and wild salmon are rich in DHA and omega-3s. Omega-3 fatty acids and DHA are two things that improve the quality and the function of your brain’s gray matter. It’s the truth: consuming tuna fish sandwiches can really help you fight your depression.
Some grains are really wonderful for driving away bad moods. Quinoa, barley, teff, millet, etc are all excellent for helping you feel better. These foods fill you up better and that can help elevate your moods also. It’s not hard to feel depressed when you feel hungry! The reason these grains are so wonderful for your mood is that they are easy for your body to digest and process. These foods are easier to digest than others which helps kick start a rise in your glucose levels which in turn kicks up your mood to a happier place.
Green tea is wonderful for moods. You knew green tea had to be mentioned, right? Green tea is found to be packed full of an amino acid referred to as L-theanine. Studies have found that this specific amino acid can actually stimulate brain waves. This helps focus your mental energy while simultaneously making the rest of your body more relaxed. You already knew that green tea helps you be better. Now you are well aware that green tea helps you to elevate your moods as well!
