The first time I tasted chocolate sable cookies, I wasn't actually in France, but in Miette's Bakery in San Francisco. If ever you are in Paris, you must make a pilgrimage to the Pierre Hermé boutique on rue Bonaparte. I made such a pilgrimage during a trip to Paris the first year I was in business, joining the queue that wraps around the block. Sable in French means "sandy" — these are a classic French cookie, made out of crumbly chocolate shortbread.
Steps to make Chocolate orange Sable cookies:
- In a mixing bowl beat butter and sugar until light and fluffy.
- Then add vanilla extract, melted chocolate & orange peels and again beat it well for another 30 seconds.
- Now sieve maida, Coco powder & rice flour, add this to the wet ingredients and mix well into a thick batter.
- Now place the batter on a cling film and roll it into a tight log. And refrigerate the cookie dough for an hour or until firm.
- Once the cookie dough is firm, cut it into thin slices and place them on a baking tray lined with parchment paper and bake the cookies in a preheated oven over 170°c for 12-15minutes.
- Once the cookies are out from the oven place them on a wire rack & cool them for at least 30 minutes.
- Once the cookies cool down apply cream cheese frosting on each cookie & cover them with another. Garnish with white chocolate ganache & serve.
- For cream cheese frosting- beat together 125gms cream cheese with 50gms butter & 300gms icing sugar. Once fluffy it's ready to use.
