Steps to make Rice Flour Cut-Out Cookies:
  1. In a bowl, cream the room temperature butter until white, and mix in the sugar.
  2. In a container, beat the egg and gradually add it to the bowl from Step 1 and mix.
  3. Sift the rice flour into the bowl, then using a rubber spatula, mix with a cutting motion and bring the mixture together. If you can't bring the dough together, add soy milk to adjust.
  4. Place the dough between 2 pieces of plastic wrap and roll it out to a thickness of 4 mm with a rolling pin. Wrap the entire dough tightly and let it rest in the refrigerator for at least 30 minutes.
  5. Take out the dough from the refrigerator and place it on a pastry board. Take off the top plastic wrap and cut out the dough with a cookie cutter.
  6. Put the cookies on a baking sheet lined with parchment paper and bake in the oven for 15 minutes.
