  1. Make ready 1 cup Boiled chana
  2. Get 2 large chopped onion
  3. Make ready 1 Chopped ginger
  4. Get 8-10 cloves Chopped or grated garlic
  5. Make ready 2 chopped chillies
  6. Prepare 1/2 cup beaten curd
  7. Get 1/2 oil half ghee(2tbsp+3 tbsp)
  8. Get For Dry spices
  9. Get 1 tsp Haldi/turmeric powder
  10. Prepare 1 tbsp Red chilli powder
  11. Get 1 tsp Chilli flakes
  12. Take 1 tsp Black pepper powder
  13. Get 1 tsp Jeera powder
  14. Make ready 1 tsp Dhaniya powder
  15. Make ready 1/2 tsp Elaichi powder (coarse)
  16. Get to taste Salt

Instructions to make Lahori chane:
  1. Boiled the soaked chana with little salt and soda.
  2. In a deep bottom kadhai, heat oil and start frying the onions.
  3. Fry till golden crispy,add ginger, garlic and green chillies followed by dry spices except salt.
  4. Add jeera, elaichi, coriander powder (will reserve half for later use)cook for some time. Add the beaten curd and keep stirring till oil starts to oozes out.
  5. Add salt, keep cooking the masala, the surface will fill up with oil, remove that oil and collect on a separate bowl, don’t throw away the oil. Keep adding the chana water and keep cooking the masala, the masala will release more oil, keep collecting the oil.
  6. When the entire water was used up to mash few chana, add to the masala and mix it well. Now add the entire chana, adjust the seasoning. Now pour in the entire oil on top along with the leftover illachi powder.
  7. Spread it evenly. Serve with any bread or rice.
