Steps to make Pumpkin Banana Muffins (or Bread):
- Preheat the oven to 350°F. If making muffins, grease a 12 count muffin tin or line with parchment liners. If making bread, grease a loaf pan and place a piece of parchment paper into the pan, letting it overhang over the sides to easily lift out the finished loaf.
- In a medium bowl, whisk together both flours, pumpkin pie spice, cinnamon, baking soda, salt and baking powder until well combined. Set this aside.
- In a large bowl, using a hand mixer, beat the butter until it is smooth and creamy, then beat in the sugar until they are combined and fluffy. Beat in the honey, eggs, yogurt (or sour cream) and vanilla extract. When that is combined, mix in the mashed banana and pumpkin puree.
- Switch to a rubber spatula and add your dry ingredients to the wet. Mix with the spatula just until combined. Then fold in the mix in you are using. Do not overmix.
- If making muffins, fill up the muffin tins with batter. Bake for 25-28 minutes, until a toothpick inserted comes out clean. Let them cool for 10 or so minutes in the pan before transfering them to a wire rack to cool completely.
- If making bread, pour the batter into the prepared pan and bake for 50-60 minutes, until a toothpick inserted into the center comes out clean. Place the bread pan onto a wire rack and allow the loaf to cool completely.
- No matter what you decide to make, store them in the fridge for 4-5 days or you can freeze for later and enjoy!

Build a trail mix out of seeds and/or nuts. Your mood can be raised by eating peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, etc. This is possible because these foods are rich in magnesium which boosts serotonin production. Serotonin is the “feel good” chemical substance that dictates to your brain how you feel all the time. The more of it in your brain, the more pleasant you’ll feel. Nuts, in addition to bettering your mood, can be a great source of protein.
If you wish to defeat depression, try consuming some cold water fish. Salmon, herring, tuna fish, mackerel, trout, etc, they’re all high in omega-3 and DHA. DHA and omega-3s are two things that actually help the grey matter in your brain function a lot better. It’s the truth: consuming tuna fish sandwiches can really help you fight your depression.
Grains can be great for fighting a terrible mood. Quinoa, millet, teff and barley are all really great for helping raise your happiness levels. These foods can help you feel full for longer too, which is a mood improver. It’s not hard to feel low when you are starving! The reason these grains can improve your mood is that they are not hard for your stomach to digest. These foods are easier to digest than others which helps promote a rise in your blood glucose which in turn takes your mood to a happier place.
Your mood could really be helped by green tea. You knew it had to be in here somewhere, right? Green tea has a lot of an amino acid referred to as L-theanine. Studies prove that this specific amino acid can essentially induce brain waves. This helps sharpen your mental energy while simultaneously relaxing the rest of your body. You likely already knew it is not difficult to become healthy when you consume green tea. Now you know that applies to your mood too!
