Instructions to make Arroz con gandules (Puerto Rican rice and peas):
  1. Please measure your rice to water according to directions on rice bag. I never measure, I just go by what I see. Usually my water is about 1/2 inch above the rice in the pot
  2. In a medium sized aluminum rice pot, heat oil and sofrito on medium high heat until oil turns green, stirring constantly
  3. Add adobo, garlic powder, sazon, pork flavor, tomato sauce, water and pigeon peas and bring to a boil
  4. Wash rice and add to pot stirring occasionally (so that the rice doesn't stick)
  5. Lower heat once rice seems to have just a coat of liquid on top, cover and let cook for about 20 minutes. Do not stir too many times once heat is lowered as it will make your rice mushy.
  6. Rice is done when rice grains are open.
  7. Note: you can also use corn, Vienna sausages, red beans, chorizo, chicken, cut ham or just plain yellow rice instead of using gandules. This is the typical recipe for Puerto Rican rice. I also add pimiento sometimes.

Information on How to Elevate Your Mood with Food

Most of us believe that comfort foods are bad for us and that we must avoid them. If your comfort food is candy or junk food this is true. Other times, though, comfort foods can be altogether nourishing and it’s good for you to eat them. Some foods honestly do improve your mood when you eat them. When you are feeling a little down and need an emotional pick-me-up, test out a couple of these.

Eggs, believe it or not, can be really wonderful at fighting back depression. Just make sure that you don’t toss out the yolk. When you want to cheer yourself up, the yolk is the most essential part of the egg. Eggs, particularly the yolks, are loaded with B vitamins. B vitamins can truly help you raise your mood. This is because they improve the function of your brain’s neural transmitters (the parts of the brain that affect how you feel). Try to eat an egg and feel happier!

Make several trail mix of nuts or seeds. Your mood can be elevated by eating peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, and other types of nuts. This is possible as these foods are rich in magnesium which promotes serotonin production. Serotonin is a feel-good substance that dictates to the brain how to feel at any given time. The more of this chemical in your brain, the more pleasant you’ll feel. Not only that, nuts, in particular, are a terrific protein source.

Cold water fish are excellent for eating if you want to combat depression. Cold water fish including tuna, trout and wild salmon are chock full of DHA and omega-3 fatty acids. Omega-3 fatty acids and DHA are two things that raise the quality and the function of your brain’s gray matter. It’s true: consuming a tuna fish sandwich can seriously boost your mood.

Some grains are truly wonderful for fighting off bad moods. Quinoa, barley, millet, etc are excellent at helping you have a happier mood. They help you feel full as well which can actually help to improve your mood. Feeling hungry can really make you feel awful! These grains can improve your mood since it’s not at all hard for your body to digest them. They are easier to digest than other foods which helps kick up your blood sugar levels and that, in turn, raises your mood.

Your mood can really be helped by green tea. You just knew it had to be mentioned in this article, right? Green tea is loaded with an amino acid known as L-theanine. Research has found that this amino acid induces the production of brain waves. This helps sharpen your mental energy while at the same time relaxing the rest of your body. You were already aware that that green tea helps you be better. Now you are aware that green tea helps you to lift your moods also!

You can see, you don’t need junk food or foods that are terrible for you to feel better! Try several of these instead!
