- Thinly slice Cucumber into a bowl. I always use a vegetable slicer. Add Salt and massage, then rest for a while.
- Soak Dry Wakame in cold water until soft, drain well. Cut to small pieces if large.
- Combine Sugar, Rice Vinegar and Soy Sauce to make dressing. Alter the amount of Sugar and Soy Sauce to suit your taste.
- Squeeze the Cucumber to remove excess salty water, and combine Cucumber, Wakame and Dressing and mix well. If the flavour is too strong, add some water.
- Sprinkle some Toasted Sesame Seeds over and serve.
