- Firstly cut the vegetables into small size and wash it properly. Now boil the water in a vessel and blanch the veggies for 3 minutes only. Then strain the water and keep the veggies in sunlight for 2 hours or under the fan.
- Now take a pan add cumin seeds, fennel seeds, black pepper and fenugreek seeds and roast it for 2 minutes and make a coarsely powder.
- Take a pan add mustard oil and heat it at high flame till raw smell gone then switch off the flame and after cooling the oil add asafoetida and turmeric powder and mix well and add coarsely grind powder in it and mix all.
- Now take our dried veggies add chillies and ginger too and add black mustard powder, salt, red chilli and oil and mix all the things very well. Now add 1/2 cup white vinegar and mix well. Store it in dried jar and after 3 days our pickle is ready to eat.
