Instructions to make Mixed Vegetables Pickle:
  1. Boil 3 cups water in a pan,add carrots,cauliflower and radish.Cook fo 3 minutes.
  2. Dreain the vegetables and spread on a dry cloth.Let be dried iether in sunlight or under a fan for 1 hour.
  3. Dry roast the spices mentioned above and dry grind coarsely.
  4. Take dried vegetables in a bowl,add green chillies.
  5. Heat mustard oil in apan till smoking point.Turn off flame and let it be cooled.Add turmeric powder to the oil and mix.
  6. When oil is cool,add to vegetables,add ground spices,nigella seeds and salt.
  7. Mix well.Put in glass jars,cover the lids and put in sunlight for 3-4 days.
  8. After 3-4 days mix vegetable pickle is ready to serve.
