- Prepare 5 tbspn castor sugar powder

- Take 2 tsp shahi gulab sherbat/ syrup

- Take curd and tie it in thin clean cloth for 2 hours to drain water.
- Remove curd from cloth after 2 hours and transfer to a bowl. Add castor sugar and mix well.
- Crush tender #coconut in Mixi jar into a soft paste.Add it to the hung curd and mix well.
- Chop dry fruits into small thin pieces and keep aside.
- Divide hung curd in 3 equal parts. Add shahi gulab to 1 part and mix well so you get nice pink colour.
- Add cardamom to the rest of the 2 parts, mix well and keep aside.
- Take a serving bowl, make the first layer of white curd, top it with the pink layer and finally cover with the white layer.
- Garnish with chopped dry fruits and saffron strands.
- Now keep it in the fridge and allow it to cool. A refreshing #coconutshrikhand is ready to serve!
